Cheese, like wine, is a very broad and quite complicated subject with cheese being produced in not only many countries, but many regions within those countries.
Like wine, some traditional cheese making methods are protected by strict production guidelines (AOC in France - Appelation Originale Controle) so that for example milk only from a specific herd of cows may be used or the cheese can only be produced in a certain region using traditional farmhouse methods. This all adds to the inrigue of the product that ends up on our plates and ultimately increases our enjoyment of consuming it.
